I'm participating in
the Oklahoma Women Bloggers Challenge "For the Love of Blogging" this
week, today the topic is food.
I am definitely
a "live to eat" kind of person. I love food and lately I've found
myself with a love of flatbread pizza. I've always been a fan of pizza, but
this gourmet pizza "cracker" as brought my taste buds a love that
defies description.
So today,
with the subject of love and food, I thought I'd share my Spinach Artichoke
Chicken Flatbread Pizza with you.
Spinach
Artichoke Chicken Flatbread Pizza
Ingredients:
1
cup cooked Chicken, cut into cubes (I use a Mediterranean spice mix on mine)
1 package of Creamed Spinach
1 can Artichoke Hearts, chopped
2 Tablespoons Parmesan Cheese
1 tsp (or so) Garlic Powder
Mozzarella Cheese to your liking
Olive Oil
Thin pizza raw pizza dough (like Pillsbury)
1 package of Creamed Spinach
1 can Artichoke Hearts, chopped
2 Tablespoons Parmesan Cheese
1 tsp (or so) Garlic Powder
Mozzarella Cheese to your liking

Thin pizza raw pizza dough (like Pillsbury)
Directions:
I used a pizza stone in my oven and heated it to 450.
Drizzle a bit of olive oil onto the flatbread and sprinkle with garlic powder.
Throw them onto the pizza stone to crisp 5 to 8 minutes.
Cook spinach according to package direction.
When spinach is done, empty into bowl and add chopped artichoke hearts and Parmesan cheese.
Mix well.
Remove flatbreads from oven.
Spoon and spread spinach mixture onto flatbreads.
Add chicken.
Sprinkle with mozzarella cheese.
Return to oven until cheese is melted and brown, about 5 minutes.
